OS 8.1 was more like OS 7.1.
7.5.3 was, in fact, a pretty stable OS
OS8 was the first of the PPC 'native' system efforts, and ended the reign
of the 030 Macs
I find OS8.6 to be as stable an OS as I've ever run (from OS 3.2 up) and
has neato noises and desktop pictures to boot...8>)
My advice is to spring for OS 8.5/6 if you're using a pre-G3~post-040 mac.
