Right, Andy, CaptureOne isn't yet Nikon compatible on a Mac (though there is
a beta version for Windows, which I understand is quite buggy).

I've used MacBibble for a long time.  It can do all you're talking about
below though the interface isn't as slick or refined as CaptureOne.

Until the latest version (3.1) it was also so VERY slow as to be maddening;
it's MUCH improved in that department now, certainly faster than Nikon's
homegrown software.

You can tweak individual files and the program saves all your settings and
then batch all those individually tweaked files, each with their unique
settings, a nice feature.

And of course, it's CHEAP compared to CaptureOne.  From those using it that
have heavy workflows it beats CaptureOne hands down.
