Hi Martin,
I don't think the captioning bit is possible in any of the apps (inc Capture
One) at this moment. 
My suggestion would perhaps be this: Firstly set up remote capture to use
both camera card and pc, set image review on the camera to 5 or 10 sec. Take
the picture using the shutter release rather than the pc keyboard and whilst
the preview is on, record a small sound clip to the image. This will of
course mean opening and typing the details in later, but the sound file will
be assigned to the correct image. The rest is Photoshop territory and I
suspect that you are substantially better in that field than me ;-)
I have not has time to try this and a pen and paper might be easier?

As an alternative, if the capture software opens the file automatically into
Photoshop, can you have an action assigned to an f key to open the info
panel and therefore allow you to type in the details?
