Images were shot on a 10D, worked on in Photoshop (PS v7.0, MacOS X) and saved as tiffs. When viewed using iView Media Pro, the 'Media info' option shows all the original digital capture info which I would like to remove.

I should have searched that little bit harder ... found a similar question with an answer posted a few months ago. And it works of course!

Create new blank file same dims/res as orig then copy>paste/drag old image
into new file. Exif data gets left behind.
