How does one go about removing the embedded digital capture information
(e.g. camera type, date, aperture, etc) from image files?

Images were shot on a 10D, worked on in Photoshop (PS v7.0, MacOS X)
and saved as tiffs. When viewed using iView Media Pro, the 'Media info'
option shows all the original digital capture info which I would like
to remove.

Any ideas anyone?

Hello Tariq
Here's one method that you could probably batch:
Create a new document and paste in the old one. Use the command keys as follows:

Cmnd A Cmnd C Cmnd N (hit return) Cmnd V

A new PS document will be the exact same size by default as anything you have on the clipboard making life a little easier.
