I could get them done as quick but at 3.50 per print = 126 per 36

Fine

I have a profiled inhouse printers etc, but printing 360 pictures in 9
hours overnight without sleep is beyond me, and what would an assistant
charge to do that I wonder?

Certainly more than your 20 budget.
I did say I wouldn't bother.

If my maths is wrong or anyone else has an idea where I can cut costs and
add value to my product I would be pleased to hear about it.

As long as the parameters of this particular job remain the same then I can see your argument. There are many things which may well change over the years not least of which is the closing down of overnight D&P but just as likely another photographer offering to your client the same service plus 'digital copies for you to email' or some other temptation. Sometimes it is also about staying ahead of the game to protect your interests.
