Paul, See if you can get a Hahnemuhle sample pack and try the 188gsm "Photo Rag". I've just been viewing images with a client printed on the 308gsm and the 180gsm, we both agreed that in purely image quality terms the lighter weight is better. The paper surface is smoother (this may be a batch thing), and slightly less cream in colour than it's heavier sibling. The down side is that, being lighter, the paper is less robust, but if it's going behind glass or in folio sleeves that shouldn't matter. Simon.
