Thanks for all the help on this - Hopefully I have resolved this now. I neglected to uncheck the echo packets and the header compression (Thanks Alex & Nick) Also upon asking for a Bluetooth connection the Mac appeared to get confused about which phone I was requesting - as I was running two. Therefore it was necessary to delete a device.
