I use a couple of Maxtor 250 GB drives on a G5.
I admit I haven't set them up for RAID, but I would use the Apple Formatting tools which allow you to set up RAIDs, rather than 3rd party software. If I were to get a couple more drives ever, that is what I would do.
Generally drives with a good reputation are Seagate, IBM (Hitachi), Fujitsu - YMMV!!
As long as they are of the same size, you should be OK
