I have 400 images / files and I want to get rid of their 'EXIF' information - as I would prefer to keep that information to myself.
Paul:
Could you share with us the reasons for your wishing to keep the EXIF data proprietary? Is there some part of this that you don't want others to be able to see, like shutter-speed and aperture, metering type, etc. or are you wanting to prevent clients and stock agents from seeing the type of camera you are using?
If the latter, then removal of EXIF would force those groups to evaluate the image on it's own. Changing the information could constitute fraud, and I would advise against this. Long term I feel it's in our own best interests to educate clients and others about the flexibility (as well as the downsides) to digital camera files rather than feel it's necessary to "hide" this kind of information.
