Mike:

If you are unwilling, or uninterested in getting into a RAID solution, but do
wish to use hard drives I would recommend the following.

Get two equivalent sized drives (could be same or different manufacturer).

Use one drive as your "working drive" for all image data. Use backup software
(retrospect or similar) to back drive 1 to drive 2 every evening while you
sleep.

For added security, make drive 2 a "removeable" hard drive (there are chassis to
do this for PC's) and on a regular basis (at least monthly if not weekly) swap
this drive with another that is "off-site."

That won't cover all the contingencies, but it's better than using one single
hard drive and nothing else.
