I rarely need B&W prints, but when I first did, I used the 2100 profile from Epson (& Matte ink/paper): The result was spot on. Until the ink dried. The slight magenta cast was easy to deal with using an adjustment layer, which is OK for my occasional needs. I had expected worse problems, especially as Epson supplied the Grey Balancer software with the 2100 to deal with this.
I'm making black and white pics from colour by using the channel mixer and
on screen they look good.
Have you checked the numbers with the eyedropper tool?
I recently made a set of B&W prints as aim prints for images being printed on a Lambda, using B&W materials. The results (using the same adjustment layer) were completely neutral when viewed next to the traditional B&W prints - so consistent B&W is possible. Sorry I can't offer any advice on custom B&W profiles.
