I'd use Colorthink, simpler
the profile renamer is the right way to alter the name of a profile.

as you seem to have discovered, the renaming of a profile in the
filemanager is only affecting the external name. Most application
pulldown lists use the profile's internal name - so that inside
applications you will normally see the old name. It can get very
confusing when this happens.

You don't need proof setup to print from Photoshop, just select the
profile of the printer in the Print space <profile> section.

Of course, once the print is looking good, the use of proof setup /
custom be used to get the onscreen image [softproof] to simulate the
chosen printer.
