I'd use Colorthink, simpler the profile renamer is the right way to alter the name of a profile.
as you seem to have discovered, the renaming of a profile in the filemanager is only affecting the external name. Most application pulldown lists use the profile's internal name - so that inside applications you will normally see the old name. You don't need proof setup to print from Photoshop, just select the profile of the printer in the Print space <profile> section. Of course, once the print is looking good, the use of proof setup / custom be used to get the onscreen image [softproof] to simulate the chosen printer.
