I do the same (data on HD, OS on SSD).

It's partly because of potential reliability problems, but also
because SSDs are generally not available in large sizes.
SSDs are around 5x the price.

A quick look on Amazon:

Samsung M8 1TB 2.5" £52.00
Samsung 840 EVO 1TB 2.5-inch Basic SATA £334.85

(not sure these are comparable, but you get the idea)
