Hope I'm not teaching you how to suck eggs here:

IKEA cabinets are OK providing they are put together and installed well. Most 
bad kitchens I've encountered are a result of bad installation. My neighbour at 
my previous house had a kitchen that was on sale at £250 ($500) it was 
installed by a really good person and has lasted 15 years.

You can get granite coating for worktops which give the same look/feel of 
granite but are a fraction of the cost.

For the kitchen, it looks like I'm going to be assembling IKEA cabinets. We
can't afford the custom cabinets that were originally in the spec anymore.
Or the new appliances. And the granite counters are giving way to IKEA's oak
butcher block at 1/10 of the cost.
