Gee, this is starting to sound like a Whil "Just wondering" discussion. I keep the minimum possible: Windoze: My Computer, My Network, and the bin (in the lower right corner, as god intended it). I'd get rid of the first 2 if I could. Mac: the open volumes, and the Dock (I'd get rid of the volumes if I could) Linux (Ubu): Absolutely nothing (and I hide the status bar). My physical desk is a mess, but my virtual desks are as neat as pins.
