Linux is probably a popular OS for NAS(s), because the ext2 and ext3 file systems are rock solid, fast, and free, which avoid problems of working with proprietary OS(s) like windows. Also Linux supports lots of different type of file systems, depending on what's been built into the kernel, and the Linux SAMBA and NFS features are good for networking.
I think I have more options going with a Linux computer, but a NAS would be more straight forward, and have everything built in and ready to go.
