Lots of other people have recommended Ubuntu and that's what I use and 
love it.  One note however is that people coming from Windows are 
quickly frustrated with Linux because some of the Free but not OSS 
software is not installed by default.  This is easily remedied by 
running a simple command at the terminal window:
"sudo apt-get install ubuntu-restricted-extras"
This gets you Flash, MP3, TrueType and more.

If you are looking at more than one distribution then you may also want 
to look at "Linux Mint".  It is built on the Ubuntu distribution but has 
many of these free pieces of software already installed.

I've got my sister and parents running Ubuntu.  Neither are technical at 
all and they love it.  No problems at all.
