Realizing we all tend to like what we know, I like asciidoc (http://www.methods.co.nz/asciidoc/), as I use it regularly for quick reports and the like. You can produce a number of outputs: HTML 4.0, XHTML 1.1, docbook, LaTeX, and manpages. There's even an experimental beamer backend, so you can use asciidoc to produce presentations if you want. And asciidoc source works perfectly fine as plain text, if you don't want to convert it. Just FYI. I know some like Markdown (http://en.wikipedia.org/wiki/Markdown). Apparently there are converters from HTML to Markdown.
