I don't put them on the public Web, but I do teach at a local state
university, and my course this year is all online.  After much trial and
error (mostly the latter, it seems), I've settled on ffmpeg for my
pre-recorded lectures, and it's working well for me for screen and audio
capture and for resizing the resulting files to have a smaller
footprint.  I'm producing flv files.

I'm doing this on Linux, but it seems to be cross-platform.

What I'm missing is an easy way (a way I understand) to add a table of
contents to a flash video, so viewers can jump to what they want to
see.  I've tried flvtool2 and flvtool++, but I haven't yet made sense of
them.
