As I said, create a simple file in /etc/mail/spamassassin

I would block via iptables myself, but you could also use badmailfrom to block his email address. You could also block his IP (even a range) in the tcp.smtp file. Couple different ways to do it. Heck, you could even write a rule for SA to target him, and just have it assign him 100 points or something.
