Certainly. I don't have experience personally with hosting providers,
but I think there are some in the community that run QMT in hosted
environments. You'll need root access to your host. I would recommend
512M of RAM, and 6G HDD for the system plus whatever space you need
for mailboxes.
If you mean a SHARED WEB HOST, which usually means a common instance of
most software including apache/mail/spam filters, I don't think that
would be possible, even if you have ssh access. However, in a full VPS,
without a control panel installed, there shouldn't be a problem. The
conflicts between the software installed by a control panel such as
cPanel would be quite difficult to resolve, if not impossible.

I agree. I'd stay away from cPanel type offerings. You'll need full
control. I'd also stay away from any OS other than CentOS 5.x (at this
time).
To be honest though, I stay away from hosting services in general. I
hope that your company's decision to let someone else host the server is
well founded. IMO, many such decisions are not, although they can be
appropriate in some circumstances.
