My first thought is that if the clifford alarm is wired in correctly the 
engine shouldn't start or run if it's unplugged.
If it's like the ones i've worked on it also works out if the ignition 
is on or off from the same wires.
So i'd check your alarm wiring first.

I'm pretty sure you will need a Mk4 Fiesta temp gauge sensor and fuel 
sender for the Mk4 gauges to work properly.
I seem to remember the Mk4 Fuel sender is actually reversed compared to 
a Mk2 but that maybe the Mk5
