There are still good selections of 1" threaded headsets. Shimano still makes them (Dura Ace, Ultegra and 105 at least), Stronglight is still making them (the A9 is an excellent headset). And Velo Orange has several they have had made for their house brand as well as some other brands. Most if not all bike shops still have a good supply of 1" threaded headsets so they are easy to find.
