I used to use Outdoor Research heavy rag wool mits with dense nylon
over mitten, and found my hands sweating even well below freezing. I
gave up on them because the nylon outer mitten was just too slippery
for good grip on the bar. But a similar rag wool mit under say a
leather or surrogate leather outer would, I think, be very good. (I
have switched to thick cycling gloves under which I can easily slip a
lighter pair of cycling gloves, tho' I have kept the OR nylon outers
for a third layer in the event of very, very cold temperatures -- when
warmth trumps grip.

FWIW, I've found that, even more than thickness, up to a point of
course, is roominess: if your fingers are jammed up against the
fingertip ends of even thick gloves, they will get far colder than
under thinner gloves with 5 mm of gap at the ends. The same goes for
shoes: a summer shoe that takes two thin wool layers, perhaps under a
plastic bag, is warmer than a tight winter shoe or thick wool sock
stuffed into a tight shoe.
