You might be able to add a MIME type on your webserver, depending on it's configuration... I know adding MIME types is an option with CPanel managed web-hosts.
Another option is to change the extension from ".sitx" to ".sit" which is usually already defined as a MIME type. StuffIt is smart enough to know during decompression that it is really in the ".sitx" format.
