I mostly agree with you and, as others already suggested, the Xcode path is inevitable I think. I'm now gradually learning Cocoa and still using RB. The good part is that RB is still a good tool and can sustain my development needs until I switch to Cocoa. Just to add something to the discussion, I suggest you to take a look at Objective-Basic (http://www.objective-basic.com/). It's basically a preprocessor-based wrapper which permits to use Cocoa with a RB-like BASIC language. Some constructs are wrapped for simplicity but you can still avoid them and use full Cocoa constructs with BASIC instead of Obj-C. While it's not a mature tool, seems interesting and could be helpful for a soft transition.
