All the files are saved in /usr/lib/red5 folder.

So the webapps folder is in /usr/lib/red5/webapps/

But I don't know if there is clean method to compile an application with
only the red5 debian package, currently I have a SVN repository on my
development box, I compile files and copy the class files on my server
box.
