Coda is really nice, but it doesn't yet have code folding, which is a real pain. It is coming in Coda 2, but Panic is tight lipped about releases, so I don't know how long that we'll have to wait for it.
I tend to do most of my work in Coda, but I keep TextMate handy for complex RegEx searches (which Coda can do, but TextMate just does it better) and when I need to collapse code.
