I did not remove the old jersey *classes*, just the `META-INF/services`
entries. The classes are still there, and it seems the code is smart enough to
figure out the implementation without the META-INF stuff.
If that really works, then it opens a door to allowing users to override
jersey in their apps. My quick test worked, but more thorough testing would
need to be done.
