Given my experience with RHEL 5.x builtin Xen and VMware ESX(i), VMWare
is kind of unusable when it comes to IO-intensive workloads, while xen
is doing a decent job, as long as you run paravirtualized drivers.
And there are some rumours that rhel 5.4 will rock the block.

Well, the VirtualBox Open Source Edition under GPL will still be out
there even if they decide not to continue the commercial version
with additional closed-source components. The Sun/Oracle
merger/acquisition was still awaiting shareholder and regulatory
approval last I read. Guess the jury is still out.
There's also the OracleVM offering. It's basically a cut-down EL5 with
Xen 3.1.3 (I think). I have a vested interest, but it does seem pretty
good.
It's open source and free to download from Oracle, but you'll have to
pay for support.
