'foobar2000' (http://www.foobar2000.org/) will allow to you encode all your wav files to flac very easily. You can also then tag them at the same time; even using the freedb2 to get that info for you.
And use FLAC. It's well supported in Slim Devices; well supported in the audio community; and you can put 'Rockbox' (http://www.rockbox.org/) on your iPod now so that it can support FLAC (their wiki is down at the moment, so just give them a day or two to sort that out).
