As you indicate, you would have to disable SS RG processing or the
files would be "double processed".  I can't do this - most of my
collection is now FLAC and that would disable RG processing for FLAC as
well.  In the end I opted for just the tags, no level altering.  

Also they say the level altering can be undone - there's an "MP3Gain
undo" tag which is placed in the file so MP3Gain can later undo the
changes.

But if that somehow screws up, you have no way to go back.

With just the tags, the audio is not altered.  SlimServer then does the
volume leveling and you'd never know which program did what, yet you're
left with unaltered audio data (well, as unaltered as MP3 is, anyway.)
