Just to expand slightly on amcluesent's reply, essentially the wav file
format does not support tags.  When you ask slimserver to look at a
directory of wav files it tries to work out the tagging by itself using
some rules based on examining the directory structure.  So, depending
upon how you have organised your tunes into folders and sub-folders,
you will get different (and most likely incorrect) answers.

The conventional solution to this is to compress the wav files to the
FLAC format which does allow (extensive) tagging, plus such goodies as
replaygain, and now cover art embedding, whilst both preserving ALL of
the information in the original wav file and saving you about 50% of
the storage space. Furthermore, the SB "speaks" FLAC and so you can
stream to it in this format (helping with the limited bandwidth of some
wireless set ups)and have it decode and play right in the box.

One downside for some people is that it makes use of iTunes difficult. 
But, to be honest, I've never really understood why anybody needs iTunes
with a Squeezebox anyway.
