I have a similar setup as yours. SS only reads the files, never modifies them, so that can't be the cause. I know for a fact however that WMP will modify/add tags under the hood while it scans your library. There's however an option somewhere in WMP by which you tell it never to modify the data if it is already there (it will still add data that was missing, such as composer, etc...). I haven't seen iTunes change things under the hood though. It is supposed to have a separate repository for maintaining library data. You can edit the tags, but you have to do so explicitly via 'Show Info'.
