I agree WMP is the likely culprit. I had lots of trouble when I first started cleaning up tags due to WMP. Assuming you've got version 11 like I do do tools/options/library is the place to stop it. (Version 10 has the same or similiar options.) The bottom section (Automatic media information updates for files) is the one you're interested in. At a minimum you'll want to uncheck the "overwrite all media information" box.
