EAC will do steps 1, 2 and 3 for you. For step one you need a companion program - there are a couple, I used MAREO. You set up a configuration file which defines multiple rips, you can easily send the three rips into three master directories (this is exactly what I did). Using LAME really shouldn't be a problem, you just have to get the path to it correctly entered, though if you do use MAREO then this becomes a MAREO configuration question, not an EAC one. EAC will do a moderate job of getting data, but you will need a proper tagger. I use mp3tag, though there are others. EAC will do an excellent job of error correction, as has been said jitter is irrelevant at this stage of the process.
