I run my system off a MacBook also. As long as you have your NAS
mounted and SqueezeCenter running it shouldn't revert. Also check your
Use iTunes setting. I point directly to my drive path instead of using
the iTunes option in SC so that may be part of it. And iTunes can
revert if you launch prior to mounting your drive.

On a side note, I have a limited collection on my laptops drive and
full on NAS. SqeezeCenter always points to the later, but I can play
music from the former when out and about. Also you can have multiple
libraries within iTunes, I find the app Libra worth it to switch back
and fourth.
