If you are going to have to do it twice most of the time, my recommendation, which is what I do, is to play the LP through recording software that has an auto-level facility. The first time, play it with auto level turned on without actually recording. Once the LP has finished, you'll know what the level should be set to so turn auto level off when you make the recording. Do note that LPs need to rest after playing.
