You could reassemble it via a playlist, but be forewarned that if you
rename or move any folders or files then it will break the playlist,
although you'll at least be able to see from the playlist what the order
*should* be.

I think it would be difficult -- not impossible, but very difficult --
to break up CDs like this at rip time. I suppose you could treat the
Barber + Bernstein cases like a "Various Artists" album, but that would
only get you part of the way there. 

In my case I ripped them the way they were packaged on CDs, with
movements out of order and composers mixed together, etc. Then I went in
with a good tag editor and edited the tags to get things the way I
prefer. That's what I would recommend doing. I use mp3tag, which also
works wonderfully with FLAC files, and is freeware. There are other good
tag programs available as well, but I haven't found any I like as well
as mp3tag.
