+1 on that! I started ripping to 320kbps mp3 with CDex years ago.  Then
I re-did my rips as apple losssless in iTunes.  Then I re-did them as
apple lossless in dBpoweramp.  *Now* they're done, and I won't do them
again.  I know they're secure error-free gapless rips, that sound the
same as the CD.  If I want them in another format for whatever reason I
convert them, keeping the original.  I have a copy of the bits of my
library I want on the move as 160kbps mp3 which means they're tiny and
good enough quality for headphone/car (to my ears, anyway).

A vote for dBpoweramp here: once you've played with it, getting
consistently good tags from it makes things easier!  Don't listen to
classical myself, but new releases improve classical tagging, I believe.
And keep lots of backups, of course...

Makes your computer work a little harder, but not so you'd notice. 
Formats needing to be transcoded, like WMA Lossless and Apple Lossless,
can't rewind/fast-forward but apart from that transcoding's no biggie on
a modern(ish) machine.

AAC isn't a proprietary format; Apple use it but it's not an Itunes
