As long as you don't lose power during the operation everything should be fine. Just do a test on a track to see if artwork is also reinstated. If not run an action to save the artwork to folder.jpg then do the cut and paste. If it gives you any comfort I've run a cut and paste on over 10,000 files in a single operation.
