Interesting discussion, certainly cars of varying lengths were out there.  
Still,the following refers to heavyweight cars, at least in my observation:

1. The majority of Pullman cars were 80-foot.

2. Coaches ranged from 68-foot shorties to 82-foot cars.

3. Baggage cars ranged from 65-foot cars to 72-foot cars with very few being 
80-foot cars 
except those converted from Pullmans or coaches.

4. Mail sorting cars were usually between 60-70 feet, likewise many combination 
mail/express cars.

5. Railroads such as the GN, IC, B&O, PRR in particular had a few 40-50 foot 
baggage/express cars with the door in the center.

6. Many roads had ordinary box cars outfitted with steam and signal lines for 
service as mail storage or railway express cars in passenger trains.

But the majority of coaches and Pullmans ranged from 72-82 feet in length.
