Scott,

In every scale, modifying and bashing is the backbone of the hobby.  It's been 
going on since the first model crawled out of the primordial soup of cardstock 
and wood.

AM is good, SHS is/was better.  SHS was recently purchased by MTH if you are 
not aware.

Think of American Models as Athearn before their Genesis Line appeared.  

You get a good running, solid model with acceptable detail by itself, that also 
provides a blank canvas for those who prefer something more detailed.  

AM models do tend to be Generic, while the Northern, Hudson and streamlined K4 
represent specific prototypes.

SHS was admittedly better detailed and each of their products has a basis in a 
specfic prototype.  The F-units did have some detail variation dependent of the 
roadname.

Are these products the ultimate in model railroad detail? No.  The "perfectly 
detailed" mass produced model doesn't exist in any scale.  That is where 
limited run and brass importers come in, and there can be shortcomings there, 
too.

You also have to consider that AM is and SHS was a very small company without 
the resources of likes of Athearn and Walthers available to them.  The fact 
that both of these companies have put out the amount of product they have is 
amazing.
