Part of the reason is legacy, for lack of a better work. It what scalers of old used on their equipment because of reliability and availablility.
There's also the occasion where the HO couplers, with their wide array of shank styles and lenght, allow for mounting with in difficult situations little effort. There's also been the age old debate about the size of the couplers. Some feel the HO couplers, being oversize for HO, are more to S Scale proportions than the 802, which in reality, is a rebranded #803 On30 coupler. It's a debate that will likely go on until the end of time, but it all boils down to one's own personal preference and visual interpretation.
