Have you ever asked David Kohel if he is willing to release the source files for his cryptography book? The PDF has a creative commons license, so the odds seem good.
Are there any foundations or other funding agencies out there that might support work on creating free and open source texts? I'll work on my own time if I have to but I could do a lot more with a small grant.
