I could not run a test using %mp3 on that machine, but it didn't occur to
me that I could always try %wav. Which I did. Surprise: the lag is almost
the same! That would indicate an inefficiency in the core of liquidsoap.
Please run the two experiments (with vorbis and wav, maybe also MP3) and
tell us what kind of result you get.
