[CnD] air friers or instant pot

2020-05-06 Thread andrew edgcumbe via Cookinginthedark
Hi My name is Andrew I am looking for either a air fryer or instant
pot. I know you can do fries in the air fryer but can you do fries in
the instant pot? I have heard that the air fryer fries out of air
fryer are not really different from ones you would do in your ovin. I
am sort of wanting ones that sort of taste crispy and tast more like
deep fried fries or close to it. Do you feel the air fryer gives that
kind of taste? also does the instant pot do fries and what are fries
from an instant pot like would they be any different from an ovin?
Also when it comes to taking fries or stuff out of an air fryer or
instant pot how hard is it for somebody who is blind to get stuff out
when it is very hot like is it like a baskett that you can lift up
and poor on to a tray or something or what technique do you use to do
this?

For crunchy broccoli, I would preheat the pan in the oven and use frozen
broccoli. Just a thought.

Re: [CnD] Easy Cheesy Zucchini Gratin

Sounds good, minus the xanthan gum. I’m sure these days the stores are having a
real run on that/joking. Would rather use cornstarch or flour as a thickening
agent, which is what I read xanthan gum is.

[CnD] Roasted Parmesan-Garlic Carrots

2020-05-06 Thread Jennifer Thompson via Cookinginthedark
Roasted Parmesan-Garlic Carrots

Original recipe yields 4 servings

Ingredients

1 pound carrots, peeled

1 tablespoon olive oil

½ teaspoon garlic salt

¼ cup grated Parmesan cheese, or more to taste

Directions

Step 1

Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with
aluminum foil.

Step 2

Stir olive oil and garlic salt together in a small bowl; pour into a large
resealable plastic bag. Add carrots to the plastic bag, seal, and shake to
coat carrots completely in oil mixture. Arrange coated carrots onto the
prepared baking sheet.

Step 3

Roast carrots in preheated oven until crisp-tender, about 45 minutes.
Sprinkle 1/4 cup Parmesan cheese over carrots and continue roasting until
cheese is lightly browned, 5 to 10 minutes. Garnish with additional Parmesan
cheese to serve, according to your taste.

The carrot may be cut smaller or baby carrots used, remember to watch
cooking time, as it will be decreased due to carrot size.

This can be made quicker by pre-cooking the carrots half-way and then
roasting the last half. Roasting the carrots give the carrots a great, full,
and wonderful flavor!

[CnD] Recipes for keto garlic bread.

2020-05-06 Thread Jennifer Thompson via Cookinginthedark
homemade garlic bread.

Here are the ingredients for the Bread:

1¼ cups almond flour

5 Tablespoons ground psyllium husk powder

2 teaspoons baking powder

1 teaspoons sea salt

2 teaspoons cider vinegar or white wine vinegar

1 cup boiling water

3 egg whites

Here are ingredients for the garlic butter:

4 ounces butter, at room temperature

1 garlic clove, minced

2 Tablespoons fresh parsley, finely chopped

½ tsp salt

Here are the instructions:

Preheat the oven to 350 degrees F. Mix the dry ingredients for the bread in
a bowl.

Bring the water to a boil and add this, the vinegar and egg whites to the
bowl, while whisking with a hand mixer for about 30 seconds. Don't overmix
the dough, the consistency should resemble Play-Doh.

Form with moist hands into 10 pieces and roll into hot dog buns. Make sure
to leave enough space between them on the baking sheet to double in size.

Bake on lower rack in oven for 40-50 minutes, they're done when you can hear
a hollow sound when tapping the bottom of the bun.

Make the garlic butter while the bread is baking. Mix all the ingredients
together and put in the fridge.

Take the buns out of the oven when they're done and leave to let cool. Take
the garlic butter out of the fridge. When the buns are cooled, cut them in
halves, using a serrated knife, and spread garlic butter on each half.

Turn your oven up to 425°F and bake the garlic bread for 10-15 minutes,
until golden brown.

Enjoy! This makes 20 servings (1 piece per serving). Here is the
nutritional information for one piece: 1 gram Net carbs, 2 grams fiber, 9
grams fat, 2 grams Protein, kcal: 93

[CnD] Recipe for NORWEGIAN SUGARED NUTS

2020-05-06 Thread Jennifer Thompson via Cookinginthedark

Hi here is a healthier option for anyone who is interested.

Stevia Coated Nuts

While this recipe is focused on using peanuts, you are welcome to use any
nut of your choice. That included almonds, cashews, or even mixed nuts.

Subbing in another extract for your Vanilla Extract is a nice way to add
more flavor in this recipe. There are other great extracts to try such as
maple or (I just noticed this one) cake batter flavor extract.

Spicing up your Stevia coated nuts in another yummy way to personalize them.
I like Pumpkin Pie Spice, Allspice, nutmeg, or even ground cinnamon for this
recipe.

SINCE THIS RECIPE CALLS FOR STEVIA AND NOT SUGAR, YOU MAY NOTICE A
DIFFERENCE. Stevia does not caramelize the same way that sugar does.
However, this difference should not have an effect on your sugar free
sugared nuts.

Ingredients

4 tablespoons of the granular Stevia or 1/2 cup of the Stevia sugar
equivalent.

1 1/2 teaspoons Vanilla Extract.

2 1/2 tablespoons Water

1/2 teaspoon Salt

1 1/4 cup Nuts

Instructions

1. Prepare a cookie sheet with sides by lining it with parchment paper. Set
this aside as you will need it later on.

2. In a 2 quart pot or small pan, combine the Stevia,Vanilla Water, and
salt. Cook this on medium until it begins to boil. You will need to stir
this as well as it cooks.

3. When pot begins to boil, toss in the nuts and continue to toss until nuts
appear to caramelize.

4. Remove the nuts from the heat and carefully (as they will be hot) spread
the nuts out on the cookie sheet that you prepped in the first step of these
directions. Allow to cool.

5. An option, while the nuts are cooling, you can sprinkle additional
sweetener, smaller seeds, or cinnamon on them for additional tastes.
