Oh, okay! I do this, too, but slightly different. the original recipe, years
ago, on the bag said to lay one downon the sheet, butter it, put another on
it, and then build it, and not let sauce go all the way to the edge; leave
about a one inch border, then build it, and bake at 350 degrees F. for 10
minutes. delicious.

I like a thin crust pizza, so I use a flour tortilla to build onto.
Pepperoni, loads of cheese, and spicy sausage with some pizza sauce. Two of
them will fit onto a lightly greased cookie sheet, bake at 350 for 7 to 9
minutes. Top with another flour tortilla and pinch moistened edges to seal
just to be different.

I also make English muffin pizzas.
I put them in the oven for 10 to 15 minutes, at 350, and they turn out
crispy. Yum! I use precooked bacon, grated mozzarella cheese, sliced
pepperoni, mushrooms, sometimes, diced peppers if I have them, diced
onions, ham, if I have that, I load them up good!
And 12 pizzas sure don't last long here, between 2 of us.

Re: [CnD] making mini-pizzas

2015-02-04 Thread Regina Marie via Cookinginthedark
tortillas work well. also, you can use English muffins or French bread cut
to desired lengths. If you make your own dough or use a packaged dough mix
(walmart has a good one surprisingly; not sure of the name, but it comes in
a package and not a box.) muffin pans will help shape the dough. Pizza dough
is pretty easy to make. The time takes in the rising fazes, but you can
start it and go do something else while it rises.

Pizza Dough

Ingredients
. 1 cup warm (110 degrees F) water
. 1 (1/4-ounce) envelope active dry yeast
. 1 teaspoon sugar
. 1 tablespoon plus 1 1/2 teaspoons extra-virgin olive oil
. 3 cups bleached all-purpose flour
. 1 teaspoon salt
Directions
In a large bowl, combine the water, yeast, sugar, and 1 tablespoon oil and
stir to combine. Let sit until the mixture is foamy, about 5 minutes.
Add 1 1/2 cups of the flour and the salt, mixing by hand until it is all
incorporated and the mixture is smooth. Continue adding the flour, 1/4 cup
at a time, working the dough after each addition, until all the flour is
incorporated but the dough is still slightly sticky. Turn the dough out onto
a lightly floured surface and knead until smooth but still slightly tacky, 3
to 5 minutes.
Oil a large mixing bowl with the remaining 1 1/2 teaspoons olive oil. Place
the dough in the bowl and turn to oil all sides. Cover the bowl with plastic
wrap and set in a warm, draft-free place until nearly doubled in size, 1 to
1 1/2 hours.

Top with favorite toppings, cheese and sauce.
Bake at 400 DGS F 20-25 minutes till crust is golden brown.

Re: [CnD] making mini-pizzas

2015-02-04 Thread Regina Marie via Cookinginthedark
As I posted before, making homemade pizzas with homemade dough is not really
that hard. The dough is pretty easy and doesn't take a lot of kneading. You
can do it by hand or use a dough hook, wich cuts the time spent kneading to
about a minute. Pizza stones work great or just a pizza pan. You can roll
out the crust and then use them to shape the final product. For mini pizzas,
I roll out the dough to the desired thickness (about a half inch thick for
thin crust, thicker for thick crust) then use a large round cookie cutter to
cut out circles and place on baking stone or cookie sheet spaced about an
inch apart so they are not touching. Of course, as I said, you could use a
muffin pan and cut the dough to fit each slot if you like. I would probably
find a cookie cutter that size or use the bottom of a glass to cut around
with a sharp knife. You could also press into pan so it doesn't cover the
whole pan or baking stone and then cut into squares for rectangular cookie
sheet or triangles for round pans. Pull apart so they do not touch and
place toppings on them. Remember to always bake toppings on top of crust
because pre-baking crust ruins it.
