Am I to understand by the lack of replies that this is not an issue other
people are having? Even confirmation that this seems to be my problem
would be helpful, right now I cannot even find any information if this is
normal behavior or not.

I do have Sourcemod, but from what I can tell (been doing this a good
gangster minute) I don't have anything setting next maps, no mapchooser, no
nextmap, no randomcycle. I am prone to being wrong however!

You cannot assume anything from a lack of replies. The CS:GO server has
literally hundreds of bugs, many of which are serious. I'm sure most people
have stopped reporting issues a long time ago already since the vast
majority of issues are simply ignored by the developers.

They're not ignored. But they can't comment if they themselves don't know
the issue or can't recreate the problem.

My servers just go back to the default maps after the start map is played
from the collection

I haven't got any of the problems reported here. I am running 6 servers,
all using workshop method. Today I even installed the latest sourcemod
snapshot, and I am running plugins like nexmap, nominations, rock the vote,
quick map rotate, etc.. no problems at all.. I am using (due to sourcemod)
mapcycle file (just mapnames with no folders in front) and maplist file
(same, just mapname and no folders). Latest sourcemod snapshots are reading
the files correctly again. It works as it should. Except that it displayed
the wrong next map when the server is about to change map,but that was due
to nominations plugin, because it got out of synch with the mapcycle file.
I fixed it by installing a plugin that is supposed to fix this issue.

I also use gamemodes_server.txt file, defining all possible gamemodes
including the new custom gamemode. All it defines is the maxplayer setting
and depending on the server, it loads custom configs on some gamemodes.

I got 2 more servers running a specific map all the time. I set
mp_match_end_restart
1 to let it restart the map after match end.

You might want to check your configs!
